Raised in four earthen ponds on farm-milled feed and harvested to order, so live fish reach you the same day they leave the water.
Smoked catfish is cured slowly over coconut husk in our smoke house, which gives it the deep colour and firm bite you want for light soup. Smoked stock carries a batch and expiry date — the system always sells the oldest batch first.
Smoked catfish is the best I've found in Accra — proper coconut husk smoke, not liquid flavour. Only wish they had it every week.
