Grown on open plots and picked ripe, when the heat and the fruity aroma are both at their peak. Sold by the kilo, fresh — never dried or frozen.
Pepper moves fast and holds badly, so we crop it in small lots twice a week rather than harvesting everything at once. If stock shows low it usually means the next cut is a day away.
