Sixth, have one dish that can be served cold or at room temperature. Seventh, always over-buy wine. Eighth, play music but keep it quiet enough for conversation. Ninth, prep your dessert early so you can enjoy the main course. Tenth, and most importantly — if something goes wrong, laugh about it. Your guests will remember the energy, not the food.
